The plums are abundant and beautiful. I have been working on refining a leather. I think I have found a combination that I think is tastey. I used citric acid for the first time which really keeps the color vibrant, and also cooked the fruit for a short amount of time. Here's what I've come up with.
For every 4 cups of fruit add:
1/2 cup water
1/3 cup sugar ( I used a dark cane sugar)
1/2 tsp. citric acid
on the stove cook just until the fruit is softened.
Add 1 tsp vanilla
Put it all in the blender then on your dehydrator trays. (Be sure you give your trays a quick spray of Pam, it makes taking the leather off a lot easier.)
Dianna has been trying hers in the oven and hasn't had success. I am trying a batch in my oven but don't have results yet to report on. The picture is of the purple plums, I have some yellow plums drying right now, they aren't as pretty but have great flavor.
