These carrots were dug this morning, they are wonderfully sweet. Dad filled leaf bags this fall and put them on top of the carrot beds and we have had fresh carrots all winter. They are in beautiful shape. I am amazed. This season I am going to overwinter carrots and try parsnips. It is really nice to dig something fresh when snow is expected tomorrow. The purple carrots have the best flavor and I ordered seed for this variety again, but they look really nasty cooked or bottled, kind of a sick brown, unless you want to peel. One thing I have discovered is the fresh root vegetables have a much softer skin and since that is were a lot of the vitamins hang out I prefer to just give them a good scrub.
Where Nelson and I live and think of new ways to lure our grandchildren to stay longer and longer!

Update, Farm 2009

Adam's dad grows the purple carrots too. I love the flavor but your are right, they are hard to cook with because of the color! I'm glad things are going well at the farm!
BTW, Adam and I are expecting a baby girl (Reagan) in Aug, we are pretty excited! Hope you are doing well!
